<p class="wp-block-paragraph">Denkt man an Schweden, fallen den meisten Leuten als erstes ein bekanntes Möbelhaus, Abba, Pippi Langstrumpf oder das schwedische Königshaus ein. Doch das Land im Norden Europas hat auch kulinarisch einiges zu bieten: Auf den Tisch kommt viel eingelegter oder geräucherter Fisch wie Lachs, Krabben oder Hering. Kein Wunder, hat das Land doch eine lange Küstenlinie an der Ostsee. Rezepte wie Gravad Lax oder Heringssild haben es auch über Schweden hinaus in so manche Küche geschafft und fehlen bei keinem Buffet. Auch Wild ist beliebt, hier besonders das Fleisch von Elch oder Rentier. Auf dem Speiseplan stehen aber auch Hackfleischgerichte wie Köttbullar oder Kartoffelgerichte wie Janssons frestelse. Das ist ein deftiger Auflauf mit Kartoffeln, Semmelbröseln und Sardellen.</p>



<p class="wp-block-paragraph">Heilig ist den Schweden das Frühstück, Frukost genannt. Da mag man es gerne reichhaltig und genießt viel starken Kaffee und Brot, das oft mit Butter und Marmelade, aber auch Kaviarcreme, Sild oder Käse belegt wird. Dazu gibt es die Sauermilch Filmjölk. Das Mittagessen (oder der Lunch) besteht in der Woche meist nur aus einem schnellen warmen Imbiss. Am Wochenende wird es dann üppiger mit gebratenem Schinkenspeck (Fläsk) und Kartoffelpuffer oder mit Falukorv. Die fleischwurstähnliche Spezialität hat eine besondere Geschichte. Auf die Idee zu der Wurst kamen deutsche Bergarbeiter, die im 16. und 17. Jahrhundert in den schwedischen Kupferminen in Falun arbeiteten. Dort nutze man Seile, die aus Ochsenhaut bestanden. Die deutschen Bergleute brachten dann den schwedischen Kollegen bei, wie man aus dem geräucherten Ochsenfleisch eine haltbare Wurst machte, die schnell auch in anderen Landesteilen Liebhaber fand und auch heute noch aufgetischt wird.</p>



<p class="wp-block-paragraph">Abends trifft man sich dann zum Middag, zu dem meist ein schnelles Gericht wie Fiskpinnar (Fischstäbchen) oder Pytt i panna (gebratene Kartoffelstückchen mit Zwiebeln und Fleisch) serviert wird. Dazu gibt es auch schon mal ein Bier. Getrunken wird lieber in den eigenen vier Wänden. Hochprozentiges gibt es eher selten, denn Alkohol mit mehr als 3,5 Prozent Alkoholgehalt bekommt man nur in den staatlich kontrollierten Getränkemärkten namens Systembolaget. Dank der hohen Alkoholsteuer sind die Preise dafür allerdings astronomisch hoch. Da kann ein einfaches Glas Bier in der Kneipe schon mal bis zu 10 Euro kosten.</p>



<p class="wp-block-paragraph"><strong><em>Weihnachten in Schweden: Julfest</em></strong></p>



<p class="wp-block-paragraph"><em>Die Weihnachtszeit in Schweden beginnt am 13. Dezember. Dann bringt die heilige Lucia das Licht in jedes Haus. Am 23. Dezember stellen die Kinder eine Schale Milchbrei vor die Tür &#8211; als Dank an die Wichtel, die angeblich bei den Weihnachtsvorbereitungen helfen. Der wichtigste Tag ist der 24. Dezember. Die Familie trifft sich und es wird zusammen gegessen, z. B. Julskinka (schwedischer Weihnachtsschinken). Später tanzt man gemeinsam um den Weihnachtsbaum. Dort hängt auch der Julbock (eine Ziegenbockfigur aus Stroh). Angeblich hat der Ziegenbock früher die Geschenke gebracht. Heute macht er das gemeinsam mit dem Weihnachtsmann. Erst dann geht es an die Geschenkeschlacht. Das Julfest endet in Schweden erst am 13. Januar. Am Sankt-Knuts-Tag fliegt der Baum endgültig raus.</em></p>

Unter freiem Himmel, Fleisch, Feuer und Rauch – das erinnert ein wenig an Steinzeit und diese ursprüngliche Art des Kochens macht einfach glücklich. Deshalb wollen wir in dieser Ausgabe das Grillen in seiner puren, unkomplizierten Form zelebrieren. Ein hochwertiges Stück Fleisch, ein paar Gewürze und simple Beilagen: Mehr braucht es gar nicht zum großen Grillglück.</strong></p>

<p class="has-text-color has-background has-very-dark-gray-color has-very-light-gray-background-color wp-block-paragraph">Bier ist des Deutschen liebstes alkoholisches Getränk. Es eignet sich in der Küche nicht nur zum Durstlöschen während des Kochens, sondern darf auch gerne mit in den Topf. Durch sein würziges Aroma verleiht es zum Beispiel deftigen Soßen das gewisse Etwas, es schmeckt auch in Marinaden, Suppen und sogar im Brotteig. Je nach Biersorte kann das Aroma sehr unterschiedlich ausfallen, deshalb sollte Bier vorsichtig dosiert werden. </p>



<p class="has-text-color has-background has-very-dark-gray-color has-very-light-gray-background-color wp-block-paragraph">Welches Bier sich am besten für welche Art von Speise eignet, haben wir unten aufgelistet. Der Alkohol verdunstet übrigens bei einer Temperatur von 78 Grad – allerdings können zum Beispiel Fette diesen Prozess verzögern. Deshalb ist es möglich, dass auch nach einer längeren Kochzeit noch Restalkohol in der Speise ist. Das gilt es zu bedenken, falls Sie für Kinder, Schwangere oder Menschen, die keinen Alkohol trinken möchten oder dürfen, kochen.</p>
